About the Biscuiterie H.Rault - Traditional Biscuit-Making in Mauritius

Besides its famed beautiful beaches, scenic landscapes and lush greenery, Mauritius is making its mark as a foodie destination with many hidden gems - Biscuit Manioc (or Cassava Biscuits) is one of them! Head to the H. Rault Biscuit Factory to learn more about this unusual cookie.

Located in the South East of Mauritius, the biscuit factory, owned by the Rault-Seneque family, began operations in 1870 with the production of manioc biscuits. The factory has hardly changed since. 

These traditional cookies are available in Mauritius only. One of the reasons why this business is still standing strong today is because the raw material (cassava) is available on the grounds of the H. Rault Biscuit Factory.

Witness the Authentic Biscuit-Making Process

As you enter the factory, you will take a trip back down memory lane with some of the equipment dating back to the early 1800s - such as the weighing equipment. 

The process has stayed true to the original in that most of the operations are done by hand - from the sifting to baking and packaging.

The oven is also powered the old-fashioned way - through the burning of dried leaves. Within minutes, the biscuits are ready and packed.

A visit to this factory is a must not only for those who are foodies or interested in classic recipes, but also to support a family-owned business that has managed to preserve all its practices for decades now.

About the Manioc (Cassava) Biscuits

With a recipe passed down from generation to generation, the biscuit made from cassava flour is a favourite amongst locals. These handmade biscuits are available in different flavours; butter, milk, coconut, chocolate, vanilla, grilled sesame seeds and cinnamon.

Some argue that all the biscuits taste the same but a connoisseur will know the flavour when tasted.

Good to Know: Manioc biscuits don't contain any preservatives or colouring agents and are also gluten-free!
